Sunday Dinner - Pork Tenderloin

Our friends cooked dinner for us recently and they prepared the most amazing Pork Tenderloin I have ever eaten. So all during dinner I was oohing and aahing (and questioning: what is this I am tasting here? And how did you make this flavor there?)

Then I hurried to write down everything I could remember the second we got back home....

Here is the yummiest Porkloin Dinner ever. Enjoy!! I have made it twice since and am about to make it again Right Now! But I just realized that I haven't posted this Recipie yet. So now I have :)

 You will need a Large Crockpot, and the following ingredients:

2-3 pork loins trimmed
1 cup brown sugar
1 teaspoon cinnamon
2 tables spoons butter
1/4 cup cider vinager
1 teaspoon fresh chopped garlic
1/2 cup chopped onion
salt
black pepper
3 apples sliced thick
1 or 2 yams peeled and sliced thick

In a heavy skillet brown pork loin on both sides using 1 tablespoon butter on med high.
Place pork in crockpot, deglaze pan with 1/2 of the cider vinager, pour over pork. In a small bowl combine the sugar, cinnamon, rest of butter, rest of cider vinager - set aside.  put onions, garlic, salt and pepper over pork. add yams, then apples on top. Spoon sugar mixture over apples. Cook in crockpot 2 1/2 hours on high or 4 hours on low. If needed can be cooked longer add apples and yams and sugar mixture last 2 hours.
